I am not sure why but this week feels like it is creeping along. I'm not going to complain about it though because most of the time the days fly by way too fast! I feel like I need all of the time I can get for the last minute planning of my trip to Europe anyway! I have no idea what I'm doing! That's part of the adventure though right? It's a good thing the person I'm going with has been there:) I am getting so EXCITED! It's sinking in more and more that I am actually going! I have wanted to go for so long I can hardly belielve it's going to happen!

I don't know about you but I love pumpkin spice lattes, but I'm kinda picky about them too. I really don't like it when they are too sweet and syrupy tasting. So I created my own recipe from looking up other recipes! Mine uses honey instead of sugar. I love honey in my lattes anyway so I figured why not just use it in my psl's too!
1 1/4 cups water
1 cup honey
1 Tbsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp ground nutmeg
4 Tbsp canned pumpkin
Combine all ingredients in a pot and simmer for 15 min or so. Once it becomes a little syrupy strain it through cheese cloth.
Add this syrup to your coffee or your latte! I use about a tablespoon for my latte. It is so good and so easy to make. And it is so much better for you than the sugary syrups from most coffee houses. And not to mention so much cheaper!
