Another recipe =} Because I love to cook!
Pizza on the grill is one of my favorite summer/fall recipes! It is so delicious!!! It's perfect for this time of year with all the fresh tomatoes from the farmers market aka my parents garden!
Pizza Sauce:
4 lb. Roma Tomatoes quatered
1 C. yellow onion roughly diced
4 Cloves garlic
2 t. kosher salt
1 t. red pepper flakes
1 t. sugar
1/2 C olive oil
1/2 C fresh basil chopped
Toss all together except the basil, put in a baking dish.
Bake at 450 degrees for 35 to 40 min.
When it comes out of the oven stir in basil, let cool some and roughly dice and smash up the onion and tomatoes to desired consistency.
Note: This pizza sauce MAKES the pizza! You have to make it. My family and I no longer buy pizza sauce! Once you have this on your pizza the boughten stuff is awful!

Makes enough for 4 - 12 inch pizzas
Total time 14 min + 3 hrs rising
Combine
1C warm water
1 T. sugar
1pkg. (1/4oz.) active dry yeast (21/4 t.)
Mix:
2 1/4 cups all purpose flour
1C cake flour
1 T. kosher salt
Add:
2 T. olive oil
COMBINE: water, sugar, and yeast. Proof until foamy, about 5 min.
MIX: flours and salt in the bowl of a stand mixer fitted with a dough hook.
ADD: oil to yeast mixture once it has proofed, then pour into flour mixture. Knead on low speed 10 min. ( if kneading by hand, knead same amount of time.)
Place dough in a lightly oiled bowl, turning to coat . Cover with plastic wrap and let rise in a warm place until doubled, about 2 hours.
Punch dough down and divide into 4 balls, pinching the bottoms closed. Cover with plastic wrap, and let rise in a warm place another hour.
GRILLING PIZZA:
Roll our the dough with a rolling pin, working from the center to the edge on a dry surface dusted with flour. Shape into a 10 - 12 in circle.
GET TOPPINGS READY.
ON THE GRILL:
Preheat the grill with one side set to medium high. the other side set to low . Place dough over the hot side, close the lid and cook for 2 - 3 min. The crust will bubble and grill marks will appear underneath. Use tongs to flip the crust.
TOPPINGS: Before adding toppings, move the crust to the cool side of the grill. (If you don't have double burner, move the crust to a baking sheet.) Add toppings, then return the pizza to the hot side for 4 - 5 min. Check it frequently for signs of burning. When the cheese has melted it is done!
Roast your red pepper it is so much better! Brings out the sweetness! |
Prep is key! You want everything to be ready to assemble when you get the crust on the grill! |
